Kaz our barmaid missed her bus into the pub today, so we had to send Lingo down to the cellar to find something for us to drink.  So today’s State of Beer is Illinois, and we’ve selected a home-town sipping favorite – Goose Island’s Bourbon County Stout.  We really like this rich, dark, flavor-rich beer.  10/10 from both of us!  Here’s what Greg Hall the brewmaster from Goose Island says about it:

"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout—so big, the malt was coming out of the top of the mash tun. After fermentation, we brought in some bourbon barrels that aged the stout. One hundred days later, Bourbon County Stout was born. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said it's a great cigar beer. But I have yet to try a cigar that can stand up."

Sweet Brown Pickle - Branston type.

 

Makes 4 x 500ml (16 fl oz.) jars.

 

carrots        - 2 cups, finely chopped

rutabaga     - 2 1/4 cups, cut into 1/8" cubes

garlic          - 4 cloves, finely chopped

dates           - 4 oz. finely chopped

cauliflower  - 1 1/2 cups, finely chopped

onions         -  1 1/3 cups, finely chopped

apples         - 1 1/3 cups, finely chopped

zucchini, unpeeled - 1 1/2 cups, finely chopped

sweet gherkins -  15, finely chopped

dark brown sugar - 9 oz.

salt - 1 tsp

lemon juice - 4 tbsp

cider or malt vinegar - 12 fl. oz.  (we used half & half)

Worcestershire sauce - 1 tbsp

mustard seeds - 2 tsp

ground allspice - 2 tsp

cayenne pepper - few dashes - optional

Caramel colour - liquid gravy browning - as required.

(Note - we also added a can of tomato paste as the Branston label indicates tomatoes as one of the ingredients.)

 

Combine all ingredients except the gravy browning in a large saucepan.  Bring to the boil, then simmer for 1 1/2 - 2 hours until the rutabaga is cooked through, but still firm.

Add the caramel colouring until the colour is dark brown.  Bottle and seal.

The flavour will improve if the pickle is allowed to age about three weeks before using.

 

Note - when we tried this, the pickle turned out fine - but a little drier than Branston brand pickle - next time, we tried leaving the lid on the saucepan while simmering.  It was better and this is now our standard procedure!
