sample something from the West coast – Anchor Steam’s Summer Ale. A beer somewhat out of season, the lads take
a dimmer view of it to Angie.

Sweet Brown Pickle - Branston type.
Makes 4 x 500ml (16 fl oz.) jars.
carrots - 2
cups, finely chopped
rutabaga - 2 1/4 cups, cut
into 1/8" cubes
garlic -
4 cloves, finely chopped
dates
- 4 oz. finely chopped
cauliflower - 1 1/2 cups,
finely chopped
onions -
1 1/3 cups, finely chopped
apples - 1 1/3
cups, finely chopped
zucchini, unpeeled - 1 1/2 cups, finely
chopped
sweet gherkins - 15, finely chopped
dark brown sugar - 9 oz.
salt - 1 tsp
lemon juice - 4 tbsp
cider or malt vinegar - 12 fl. oz.
(we used half & half)
Worcestershire sauce - 1 tbsp
mustard seeds - 2 tsp
ground allspice - 2 tsp
cayenne pepper - few dashes - optional

(Note - we also added a can of tomato paste as the Branston label indicates tomatoes as one of the
ingredients.)
Combine all ingredients except the gravy browning in a
large saucepan. Bring to the boil, then simmer
for 1 1/2 - 2 hours until the rutabaga is cooked through, but still firm.

The flavour will improve if the
pickle is allowed to age about three weeks before using.
Note - when we tried this, the pickle turned out fine - but
a little drier than Branston brand pickle - next
time, we tried leaving the lid on the saucepan while simmering. It was
better and this is now our standard procedure!
